A pressure cooker is simpler and safer than its reputation suggests. Once you learn the rhythm, it’s the same every time: add enough liquid, lock the lid, bring it to pressure, start timing only when it’s actually at pressure, then release the steam the right way and open the lid away from your face. Modern cookers — electric multicookers and stovetop models alike — have several independent safety mechanisms, so the old fear of an exploding pot is largely outdated. The two habits that matter most are don’t overfill and pick the right release. Below are the steps, the natural-versus-quick-release choice, the safety rules worth knowing, and the one thing a pressure cooker should never do: pressure can low-acid food if it’s an electric multicooker.

The steps, start to finish
The exact buttons differ between an Instant Pot, a Ninja Foodi, and a stovetop pot, but the sequence is the same.
- Sauté and brown first (optional, but worth it). Most electric cookers have a sauté mode, and every stovetop cooker sits on a burner you can heat before locking the lid. Browning meat and softening aromatics builds flavor the fast cook won’t develop on its own. Deglaze the bottom afterward so nothing is stuck — stuck-on food is the most common cause of a scorch later.
- Add enough thin liquid. Pressure cooking works by trapping steam, and steam needs water. Electric cookers generally need at least about one cup of thin liquid; too little and the pot never reaches pressure, or it scorches trying. Keep liquids thin while under pressure — thin broths, stock, wine, water. Thick sauces, tomato purée, and dairy can settle, block heat transfer, and trigger a scorch. Thicken after cooking, not before.
- Don’t overfill. Fill the pot no more than two-thirds full, and only half full for foods that foam and expand — beans, grains, pasta, split peas, applesauce. Overfilling foamy foods lets froth clog the steam vent, which is exactly what you don’t want.
- Lock the lid and set the valve to seal. Confirm the sealing ring is seated all the way around and the vent is clear of debris. On electric models, turn the pressure valve to the sealing position; on stovetop models, seat the regulator or weight per the manual.
- Bring it to pressure, then start timing. This is the step most people get wrong: the cook time counts from the moment the pot reaches full pressure, not from when you press start. Coming up to pressure adds several minutes on top of the stated cook time — longer for a full pot or a large-capacity cooker. When it’s at pressure, the timer begins (electric cookers do this automatically).
- Release the pressure, then open away from you. Use natural or quick release (below), wait for the float valve or pressure pin to drop completely, then open the lid tilted away from your face and hands. If the pin is still up, there’s still pressure inside — never force it.
Natural vs. quick release: the choice that changes your food
How you let the steam out is not a formality — it changes texture and doneness, and it’s the difference between a clean finish and hot liquid spitting across your counter.
- Natural release. Turn the cooker off (or off the heat) and let the pressure fall on its own. This takes roughly 10 to 30-plus minutes depending on how full the pot is. Use it for meats and stocks, where the slow wind-down keeps things juicier; for large or liquid-heavy pots; and for anything foamy. Quick-releasing a foamy or brothy pot sputters hot liquid out the vent.
- Quick release. Carefully move the valve to vent the steam fast (use a utensil, not your fingers, and keep your face clear of the plume). Use it for vegetables and delicate, quick-cooking foods where you want to stop the cooking immediately before they overshoot into mush.
- Combination. Many recipes call for both — “natural release for 10 minutes, then quick release.” The initial rest settles the contents so the final vent doesn’t sputter, and it’s a reliable default when you’re unsure.
Pressure cooker safety, without the fear
Today’s cookers are engineered so the lid physically will not open while there’s pressure inside — a lock and float-valve system holds it shut — and they include backup steam vents if the main path is blocked. A few habits keep them that way:
- Keep the steam vent and sealing ring clean after every use, and replace a ring that’s cracked, warped, or smells permanently of last week’s curry. A worn ring is the usual reason a pot won’t seal.
- Never force the lid. If it won’t twist open, there’s still pressure — wait for the pin to drop.
- Point the steam release away from cabinets, shelves, and your body before you vent.
- Don’t deep-fry in a pressure cooker. Pressure cooking and hot-oil frying are different processes; the appliance isn’t built for it.
None of this is exotic. The fear people carry is mostly inherited from mid-century stovetop cookers without today’s redundancy.
The one hard rule: canning
Everyday pressure cooking is not the same thing as pressure canning, and this is the single point in this guide where the rules are non-negotiable.
To safely pressure can low-acid foods — vegetables, meat, poultry, stock — you need a tested stovetop pressure canner with a dial or weighted gauge. The National Center for Home Food Preservation (NCHFP) does not recommend pressure canning in electric multicookers like the Instant Pot or Ninja Foodi, because they may not reach or hold the temperature required to destroy Clostridium botulinum (botulism) spores. Do not can low-acid food in an electric multicooker, even one with a “canning” button — this is an equipment-safety fact, not a preference. That “burn” warning on an Instant Pot deserves a note: it usually means the base got too hot because liquid was scarce or a sauce settled and scorched. It’s a sensor doing its job, not a broken cooker. Deglaze well, keep liquids thin, and stir thick ingredients in at the end.
What a pressure cooker is great at (and what it isn’t)
Pressure cooking shines on the things that normally take hours: dried beans without an overnight soak, tough braising cuts, rich stock, risotto without constant stirring, and a fast weeknight chili. It’s the right tool whenever water-based, slow-simmered cooking is the bottleneck.
It’s the wrong tool for crisping — a sealed, steamy environment can’t brown a surface (unless you’re using a Ninja Foodi that also air-fries) — for delicate, quick-cooking foods that overshoot in seconds, and for canning low-acid food, as above.
