There is no universal winner here, and any guide that declares one is selling you something. The real choice is a tradeoff between longevity and coating chemistry. PTFE — the fluoropolymer most people call “Teflon” — releases food a little better and lasts longer, but it belongs to the PFAS family, a fact some cooks want to avoid on principle. Ceramic is made without PFAS, which is its entire reason to exist, but it loses its slip faster and wants gentler heat. And there’s a third way: hybrid pans like HexClad put a raised stainless-steel honeycomb over a coating, so you can sear and use metal utensils. Buy PTFE for durability and value, ceramic to skip PFAS by choice, or hybrid to sear without babying the surface.

Nonstick performance and lifespan
When both pans are new, the difference is small. A fresh ceramic pan can feel every bit as slick as PTFE — eggs slide, omelets fold. The gap shows up over months, not minutes.
PTFE edges out ceramic on release and, more importantly, holds that performance far longer. America’s Test Kitchen cites roughly 5-7 years of useful life for a quality PTFE pan cooked and cleaned with care, drawing on figures from the Cookware & Bakeware Alliance. Ceramic, by comparison, tends to fade to noticeably grabbier in about two years, and Caraway’s own guidance frames ceramic lifespan in that shorter ballpark. A Taste of Home comparison of two leading ceramic lines reports ceramic can start slicker but loses its edge sooner — present that as reported and mixed, since real-world results vary with how hard you run the pan.
This is the single biggest practical difference between the two, and it’s the one to weigh against price. A ceramic pan that costs more up front and needs replacing sooner is a very different value proposition than a cheap PTFE pan that runs for years. The safety question, briefly and sourced
This is where most brand blogs get sloppy, so read carefully: PTFE and PFOA are not the same thing, and conflating them is the most common error in this whole category.
PTFE is the fluoropolymer coating on the pan. It is part of the broad PFAS family. The FDA states that intact PTFE has negligible dietary migration under normal cooking conditions — in plain terms, a coating in good shape isn’t shedding meaningful amounts into your food.
PFOA is a different substance: a processing aid once used to manufacture PTFE, phased out of US production since around 2015. In December 2023, the IARC (the WHO’s cancer agency) classified PFOA as Group 1, “carcinogenic to humans,” in Monograph 135. That evaluation is about PFOA — not about the PTFE coating on a modern pan, and not a statement that your skillet causes cancer. Newer US-made PTFE cookware is manufactured without PFOA.
The most concretely documented risk from PTFE itself is fumes from an overheated empty pan, which Poison Control discusses under “polymer fume fever,” sometimes nicknamed “Teflon flu.” That’s a reason not to preheat a dry nonstick pan on high, not a verdict on everyday cooking.
Ceramic sidesteps this debate by formulation: it contains no PFAS to begin with, which is exactly why some cooks choose it. We’re not here to adjudicate the FDA-says-safe versus avoid-by-preference argument — both positions are legitimate, and reasonable people land in different places. Heat and searing: neither is the tool for it
Here’s the thing both camps quietly agree on: no coated pan is a high-heat searing instrument.
PTFE shouldn’t be run hot and dry — Poison Control’s fume-fever discussion is tied to overheating, and PTFE begins to off-gas above roughly 500°F. Ceramic tolerates the oven better (many pans are rated 450-600°F) but degrades faster under routine high stovetop heat, so leaning on it for hard sears just shortens its already-shorter life.
If your goal is a deep, crusty sear on a steak or a smashed burger, reach for stainless steel or cast iron and keep the coated pan for eggs, fish, pancakes, and delicate sautés. The hybrid third way: HexClad
Hybrid pans try to have it both ways. HexClad lasers a raised stainless-steel honeycomb over a nonstick coating: the steel ridges sit proud of the surface, so they take the abuse of metal utensils and higher heat, while the recessed coating still gives you some release. It’s the one design that meaningfully tolerates metal tools and searing-adjacent heat better than a plain coating.
The tradeoffs are real. It costs more, the stainless can stain, and owners report the nonstick fading over time — the honeycomb frame outlasts the slip. The PTFE pick: T-fal Experience
If you cook a lot, want reliably good nonstick, and PFAS isn’t a dealbreaker for you, this is the sensible default. The T-fal Experience is America’s Test Kitchen’s Best Buy in the nonstick category — the point being that ATK’s roughly $33 Best Buy performed comparably to a premium pan near $180 in their evaluation, which tells you the expensive coating isn’t buying a better fry. PTFE is simply the cheapest path to a pan that releases an egg cleanly and keeps doing it for years, provided you hand-wash it, skip metal utensils, and don’t blast it empty on high heat. The ceramic pick: Caraway
If avoiding PFAS matters to you and you’re at peace with replacing the pan sooner, ceramic is the answer, and Caraway is the design-led one people actually keep on the stove. It’s PFAS-free by formulation, it looks good enough to leave out, and it releases well when new.
