One rule separates a slick, evenly black skillet from a sticky, splotchy one: use far less oil than feels right, and more heat than you’d guess. The method itself is short — wash the pan, dry it completely, buff on a coat of neutral oil so thin the iron looks dry again, then bake it upside down at 450°F for about an hour, and repeat until the surface builds up. Everything beyond that — the flaxseed evangelism, the soap panic, the heirloom mystique — is detail, and most of it is negotiable. Here’s the method, the chemistry behind it, and an honest reading of where the experts genuinely disagree.
The short answer
- Wash and dry. Scrub the skillet with warm, soapy water (yes, soap is fine), then dry it thoroughly. Water left on bare iron becomes rust within hours.
- Oil it, then buff it off. Wipe a neutral oil — canola, vegetable, or grapeseed — over every surface, inside and out. Then keep wiping with a clean cloth until the pan looks completely dry. If it looks even slightly greasy, keep buffing.
- Bake upside down at 450°F for one hour. Put the pan face-down on the middle rack with foil on the rack below to catch drips. The heat polymerizes the oil into a hard, bonded finish.
- Cool in the oven, then repeat. Two to four coats gives a new or freshly stripped pan a solid foundation.
That temperature is a genuine consensus, not one site’s habit: Lodge’s official instructions say 450–500°F for an hour, while Serious Eats prefers 450°F in 30-minute rounds, repeated three to four times. The details flex; the thin-oil-plus-high-heat core does not.
What seasoning actually is (the 60-second science)
Seasoning is not a layer of oil sitting on your pan. It’s oil that heat has transformed into something else entirely — Serious Eats describes the finished surface as “a form of plastic” bonded to the metal. Thin layers of fat, heated past the point of no return, crosslink with each other and grip the iron, building the hard, blackened, moderately nonstick skin that makes a good cast-iron pan feel broken in.
Food scientist Sean O’Keefe of Virginia Tech’s Department of Food Science and Technology explains the mechanism simply: heat makes small oil molecules combine into much larger ones, forming a thin protective layer that blocks rust and resists sticking. That rust-blocking job is the whole reason seasoning exists. Stainless steel protects itself with an invisible chromium-oxide layer; bare cast iron has no such defense and corrodes quickly when exposed to air and moisture.
Programmer-turned-cast-iron-theorist Sheryl Canter, whose 2010 blog post shaped a decade of seasoning advice, frames the reaction as radical polymerization: iron, heat, and oxygen generate free radicals in the oil, which crosslink into a tough film. Her insight — that oils rich in polyunsaturated fats polymerize most readily — is echoed by Field Company, which chooses its seasoning oils by polyunsaturated fat content rather than smoke point.
The practical takeaways from all that chemistry: apply oil in layers thin enough to polymerize fully, use real heat, and know that the type of fat matters at the margins — which is where the arguments start.
How to season a cast-iron skillet in the oven, step by step
Step 1: Wash the pan and dry it completely
Warm water, dish soap, a scrub. If you’re seasoning a brand-new pan, this removes packaging residue; if you’re re-seasoning an old one, get every trace of food and loose debris off. Step 2: Apply oil, then buff until the pan looks dry
This is the step everyone gets wrong. Field Company suggests roughly an eighth of a teaspoon of oil for the cooking surface — barely anything — wiped out to a dry, dull matte finish. Serious Eats gives the same instruction from the other direction: buff until the pan no longer looks even faintly greasy. Oil you can see is oil that will pool, drip, and half-polymerize into a gummy mess. Coat everything: cooking surface, walls, handle, and the outside.
Step 3: Bake it upside down
Middle rack, face-down, foil on the rack below. Upside down means any excess oil runs off instead of pooling in the cooking surface. Use the oven rather than a burner for these foundation coats — Serious Eats notes that stovetop burners create hot spots, which polymerize the oil unevenly.
Step 4: Cool, then repeat
Let the pan cool before recoating — Lodge simply leaves it in the switched-off oven. Then assess: a new or stripped pan generally wants two to four total coats before it’s ready for regular duty.
Temps and times: what the sources actually say
Every credible source lands in the same neighborhood, but the exact numbers differ enough that it’s worth seeing them side by side — something the individual guides never show you.

The spread is smaller than it looks: thin-to-invisible oil, pan inverted, 400–500°F, at least 30 to 60 minutes, cool before recoating. Deviate on any of those and the result suffers; deviate within them and you’ll be fine.
How do you know when it’s done?
A properly seasoned surface is hard, dark, and somewhere between matte and satin — never tacky to the touch. Sticky or gummy patches mean too much oil went on (the fix is below). Which oil should you use?
The practical consensus: cheap and neutral wins
For most people, the answer is whatever neutral oil is already in the pantry. Lodge recommends vegetable oil, canola, or melted shortening — and its own factory seasoning is a soy-based vegetable oil. Smithey seasons its pans in-house with pure grapeseed oil and recommends the same for owners. Field Company blends grapeseed with linoleic sunflower oil, chosen specifically for polyunsaturated fat content, which its team argues is the real predictor of durable seasoning — not smoke point. The flaxseed oil debate, honestly
Flaxseed is the internet’s favorite seasoning argument, and both sides have receipts.
The case for it. Canter’s original post argued that flaxseed oil — the food-grade version of the linseed oil painters use — is the only edible drying oil, and produces the hardest possible film. Her method is demanding: strip the pan to bare iron, apply six or more ultra-thin coats, each baked at 450–500°F for an hour with a two-hour cooldown. The Kitchn’s Cambria Bold spent around 18 hours baking six flaxseed coats onto a stripped 12-inch Lodge, and Cook’s Illustrated — as quoted by The Kitchn — reported that a flaxseed-seasoned pan survived a commercial dishwasher cycle with degreaser essentially untouched.
The case against it. Serious Eats tested flaxseed seasoning and explicitly declined to recommend it: it builds a finish fast, but that finish tends to flake off in use. Field Company calls flaxseed seasoning brittle and prone to flaking, especially when applied in consecutive coats, and pegs its smoke point at a very low ~225°F (Field’s figure — published smoke-point tables vary). Owner reports across cast-iron forums echo the flaking complaint widely enough that it can’t be dismissed as user error.
The honest verdict. Even the scientists split — O’Keefe names flaxseed, alongside soybean oil, among the high-polyunsaturated oils that form a firm layer. The chemistry genuinely favors flaxseed; durability in real kitchens genuinely doesn’t. Treat it as a high-effort project with a real flaking risk, not a shortcut to a better pan. Skip it unless you enjoy projects.
Fats to avoid
Two categories cause trouble. First, aerosol cooking sprays: additives like soy lecithin interfere with polymerization and bake into a sticky buildup, so use pure oils only. Second, saturated animal fats — lard, bacon grease, butter — as your seasoning fat. Field Company’s chemistry note is blunt: they won’t produce resilient polymer layers, though they’re perfectly fine as a light protective wipe after cleaning. By the same polyunsaturated-fat logic, olive and other high-oleic oils are mediocre seasoning candidates too, whatever their virtues in the pan.
Everyday maintenance: the seasoning you don’t have to think about
Here is the part every source agrees on and every guide buries: after the initial oven seasoning, cooking is the maintenance. Serious Eats’ advice amounts to simply using the pan; Lodge calls regular cooking the best and easiest way to keep seasoning strong. Every batch of fried eggs, seared chops, or cornbread adds microscopically to the finish.
Between full oven sessions, a two-minute stovetop top-up keeps things glossy. Field Company’s version: after cleaning, heat the pan dry on a burner, rub in about a quarter teaspoon of oil all over, and wipe to a matte finish. Smithey’s variant runs slightly hotter — a thin layer of oil over medium-high heat until it just begins to smoke, repeated once or twice. O’Keefe’s own routine is even simpler: rinse with warm water (soap if needed), dry thoroughly, wipe with a little oil after each use.

What ruins seasoning (and what doesn’t)
Soap: harmless. The polymerized layer isn’t oil anymore, so dish-soap surfactants have nothing to strip. O’Keefe traces the myth to the era of harsh lye-based soaps, which could genuinely damage seasoning; modern detergents can’t. Lodge officially endorses warm, soapy water.
Soaking and dishwashers: genuinely destructive. Prolonged water exposure rusts iron — this old warning is accurate, and O’Keefe confirms it. Never soak a cast-iron pan in the sink, and never run it through a dishwasher.
Acidic food: partially true. A well-seasoned pan shrugs off a quick tomato pan sauce or a splash of wine. Long simmers of acidic food are the real risk to the finish; for an all-day ragù or braised tomatoes, O’Keefe’s view is that enameled cast iron makes far more sense.
Metal utensils: fine. Flipping and stirring with metal won’t hurt a seasoned surface, per both O’Keefe and Serious Eats — just don’t deliberately gouge or chisel at it.
“Cast iron heats evenly”: false. Its thermal conductivity is roughly a third to a quarter that of aluminum, per Serious Eats. Cast iron’s actual superpowers are heat retention and radiant heat — an emissivity of 0.64 versus roughly 0.07 for stainless. The fix is patience: preheat 10 minutes on a burner (rotating the pan), or 20–30 minutes in the oven.
Fragile? Hardly. Century-old skillets still turn up working fine in antique stores, a point Serious Eats has made repeatedly. Seasoning is repairable; the pan itself is close to immortal.
The sticky pan, diagnosed. Gummy, tacky residue after seasoning means one thing: too much oil, incompletely polymerized. Two fixes, per Southern Cast Iron and cowboy-cook Kent Rollins: bake the pan again at seasoning temperature for about an hour to finish the reaction, or scrub the residue back — a chainmail scrubber makes short work of it — and re-season with a properly thin coat.
The nuclear option. An oven’s self-clean cycle will strip a pan to splotchy gray bare iron — effective when a finish is beyond saving, but smoky and hard on the oven, per The Kitchn (citing Cook’s Illustrated). A stripped pan is just a rusty-pan restoration waiting to happen: same process, same fresh start.
